I used Danstar BRY-97 dry yeast to ferment the barleywine for the bourbon barrel. OG 1.104 - FG 1.024 - 77% attenuation.  Very clean - no hot alcohol flavor like I have gotten when using some other dry yeasts on high gravity beers.  Flocculates well - the beer is very clear. I would dry hop this beer and bottle it in a couple of weeks if this batch was not destined for the barrel.

How many packages did you pitch into 5 gallons?

Two rehydrated packages. Fermented at 66 deg. F.
